Maré's Kiwi Caipirinha: A Refreshing Twist on a Classic

Mixologists at Maré, a popular restaurant in Hove, East Sussex, have created a vibrant take on the traditional caipirinha cocktail. The result is their signature kiwi caipirinha, which combines the tropical flavors of Brazil with the sweetness of fresh kiwi.

To make this drink, you'll need to start by brewing your own kiwi jam at home. This involves blending kiwi pulp with sugar and lemon juice, then heating it gently over low heat until it reaches a jammy consistency. The resulting jam is then decanted into a clean jar and stored in the fridge for up to four days.

Once you have your kiwi jam, you can move on to building the drink. Combine 50ml of silver cachaça with an equal measure of the kiwi jam in a shaker filled with ice. Add a squeeze of fresh lime juice and a splash of sugar syrup to taste, then top it off with two dashes of saline solution.

To mix, shake the ingredients hard until they are very cold, then strain them into a tumbler filled with fresh ice. The finished drink is garnished with a large wedge of lime or, if you're feeling fancy, a slice of dehydrated kiwi.
