Bub's Bakery reimagines baked goods with allergy-free recipes

Bub's Bakery is shaking up the culinary scene in Lower Manhattan by offering a range of allergy-friendly baked goods. The bakery's co-owner, Jenn Saesue, reveals that it all began when she realized her own child's severe food allergies meant they could no longer enjoy the treats she loved.

Saesue recounts how the decision to create an allergy-free bakery was driven by her desire to provide a safe and inclusive space for her child. She began experimenting with alternative ingredients and recipes, resulting in a menu that caters to a variety of dietary needs.

Bub's Bakery boasts a diverse selection of sweet treats, from classic cookies to decadent cakes, all made without the top nine allergens – milk, eggs, fish, shellfish, tree nuts, wheat, soy, peanuts, and sesame. By doing so, Saesue is creating an inclusive space where people with severe allergies can indulge in a wide range of delicious options.

When asked about her approach to balancing taste and allergy-friendliness, Saesue admits that it was not easy at first. "We're not cutting out any taste," she emphasizes. Instead, they use creative ingredients like coconut milk, oat flour, and rice flour to replicate the flavors and textures of traditional baked goods.

omg u no how much i need gluten free options rn 🍞🤪 so any bakery that makes them is literally lifesaver! but like, i gotta ask, do they use almond flour or something in their baked goods? cant have nuts 🤢 and also, i wonder if they do custom cakes for ppl with allergies? thats gonna be super helpful 4 me when im at my cousin's wedding soon
